ALMOND COOKIE TART

My children used to love peanut butter and jelly sandwiches. When we started the paleo diet, I didn't want them to miss out on the foods they loved, so I came up with this tart that mimmicks the flavors of a PBJ! If you keep these almond cookies on hand (see Almond Cookie recipe), which I do, this lunch is a snap!

Almond Cookie Tart Recipe

Ingredients:

• 1 almond cookie (see recipe)

• 1 tsp almond butter (or nut butter of choice)

• 7 raspberries

Directions: Spread the nut butter evenly over the cookie. Rinse and pat dry the raspberries. Set them on top of the nut butter. Enjoy!
